Chicken satay

A Thai-inspired variant of this possible dish

Serves two

Ingredients

2 chicken breasts

2 tbsp crunchy peanut butter

1 tbsp soy sauce

1 tbsp fish sauce

1 chilli, deseeded

1 garlic clove

1 tbsp ginger

Juice of 1 lime

4 tbsp water

Handful fresh coriander

Instructions

  1. Cut the chicken into meaty chunks and thread onto skewers.
  2. Put all the other ingredients into a food processor and blend.
  3. Spread a tablespoon of the satay mixture over the chicken and place under the grill until cooked through (about 10-15 minutes), turning halfway through.
  4. Serve with a shredded salad and the remaining satay sauce on the side.
