Salmon teriyaki

Teriyaki salmon

A simple sauce to add to salmon or chicken

Serves 2


2 salmon fillets

5 tbsps soy sauce

4 tbsps mirin

2 tbsps brown sugar


  1. Mix the soy sauce, mirin and sugar in a pan and bring to the boil, stirring well.
  2. Once boiling, leave to simmer until the liquid has reduced and thickened to a glossy syrup.
  3. Brush the salmon with some of the sauce and place under the grill for five minutes.
  4. Repeat this process a further two to three times, or until the fish is cooked through, making sure some sauce remains to serve.

Feeling flush?

Add 2 tbsps of sake to the teriyaki sauce for a richer, deeper flavour.
