Fire roasted tomato sausage
A healthy Mediterranean option
2 tablespoons of M&S Terribly Clever fire roasted tomato sausage paste
Half a red onion
A portion of courgette
A portion of aubergine
80g of lentils
- Wash lentils and place in a pan of water. Bring to the boil for 10 minutes and then simmer for 35 minutes.
- Chop vegetables into hearty chunks and arrange in a roasting dish with the sausages.
- Spoon over 2 tablespoons of the fire roasted tomato sausage paste and mix well.
- Cook in the oven for approximately 20 minutes at 180 degrees.
- Serve with the lentils.
Homemade potato wedges with fresh rosemary were made for this meal. Cut a baking potato into large wedges, cover with a little oil, a pinch of salt and pepper and fresh rosemary. Roast in the oven for approximately 40 minutes at 180 degrees, or until crispy and serve.
