Couscous salad

A middle eastern  inspired treat


100g couscous

100ml of vegetable stock

Small tin of chickpeas

Small portion of courgette

A few cherry tomatoes

A few thin slices of halloumi

2 tbsps olive oil

Squeeze of lime juice

1 garlic clove

Pinch of sugar


  1. Pour the stock over the couscous, mix well and leave for a few minutes
  2. Mix the dressing using the olive oil, lime juice, chopped garlic and sugar
  3. Fluff the couscous and mix in the chickpeas
  4. Slice the courgettes on the slant and halve the cherry tomatoes. On a griddle pan (or a frying pan with a little oil) cook both until tinged brown
  5. Fry the halloumi strips
  6. Place courgette, tomatoes and halloumi over the couscous and add dressing to taste
