Slow cook rogan josh

A spicy, warming curry


800g of beef or lamb stewing steak cut into cubes

2 small or 1 large onion

4 fresh tomatoes

2 x 400g chopped tomatoes

Pint of beef stock

Tomato puree

2 bay leaves

Curry paste

2 small or 1 large onion

2 cloves of garlic

1 red chilli

1 tsp ground coriander

1 tsp cumin

1 tbsp paprika

1 tsp garam masala

1 tsp tumeric


Cheat with a couple of dollops of Rogan Josh curry paste


  1. Blend the curry paste ingredients in a blender so that the onion is very finely chopped.
  2. Fry the paste and the tomato puree on a low heat in a pan that is also suitable for the oven.
  3. Add the beef in batches and brown.
  4. Return everything to the pan and add the chopped tomatoes and beef stock and stir.
  5. Add the bay leaves.
  6. Place the lid on the pan and cook in the oven for 90 – 120 minutes until the beef is tender. Alternatively, use a slow cooker.
  7. Chop the remaining tomatoes into quarters and the onion into large chunks and add to the pan.
  8. Cook for a further 15 minutes then serve.
