Frijoles Negros (black beans)

A classic Mexican dish

Serves two


400g tin of black beans

1 tsp smoked paprika

½ tsp ground cumin

1 tsp ground coriander

½ tsp cayenne pepper

½ tsp white sugar

1 tsp red wine vinegar

½ tsp salt

Pepper to taste

Dash of lime juice (or lemon)


  1. Empty the black beans into a pan and bring to the boil. Then turn down to simmer.
  2. Add the spices, sugar, salt and pepper and leave to simmer for approximately 10 – 15 minutes, or until most of the liquid has evaporated.
  3. Add the red wine vinegar and the lime juice.
  4. Serve as part of a Mexican tapas.

Feeling flush?

Add some crumbled cheese and sour cream
