Fire roasted tomato sausage

A healthy Mediterranean option

Ingredients

2 sausages

2 tablespoons of M&S Terribly Clever fire roasted tomato sausage paste

Half a red onion

A portion of courgette

A portion of aubergine

80g of lentils

Instructions

  1. Wash lentils and place in a pan of water. Bring to the boil for 10 minutes and then simmer for 35 minutes.
  2. Chop vegetables into hearty chunks and arrange in a roasting dish with the sausages.
  3. Spoon over 2 tablespoons of the fire roasted tomato sausage paste and mix well.
  4. Cook in the oven for approximately 20 minutes at 180 degrees.
  5. Serve with the lentils.

Feeling flush?

Homemade potato wedges with fresh rosemary were made for this meal. Cut a baking potato into large wedges, cover with a little oil, a pinch of salt and pepper and fresh rosemary. Roast in the oven for approximately 40 minutes at 180 degrees, or until crispy and serve.
